Sustainable steps towards health and mayonnaise recipe

Health is about the little steps we take to treating ourselves well. 
Of course there is always more we can do. But there are also little things we do each day that make us more healthy.  Our efforts are sustainable when we keep this perspective, celebrate what we are doing and make tiny steps towards improvement. 
Making your own mayonnaise is one of these small steps.  It is a small project to take-on with major health benefits. Most mayonnaise has canola oil, an oil I recommend that you stay away from.  Canola oil actually takes the place of the healthy oils in your body and wreaks havoc on the basic structure of your cells.  It also negatively impacts your liver and kidneys, and if that is not enough it also disrupts your natural anti-inflammatory pathways.  Replacing this with a healthful oil such as avocado oil is not just better for you, it makes mayonnaise good for you.

 I know a lot of you will have some eggs to eat this next week.  So give this a try as a small step towards better health this week:

Mayonnaise
  • 2 eggs
  • 1Tbs mustard
  • black pepper (to taste)
  • 1/2 tsp salt
  • 1 Tbs fresh lemon juice
  • 1 Tbs apple cider vinegar
  • 2 C avocado oil 
Directions:
Mix together yolk, mustard, salt, vinegar, and lemon juice until combined well. Add about 1/4-1/2 cup oil drop by drop, constantly until mixture begins to thicken. You are emulsifying the oil- this is the most important step to successful mayonnaise. Then add remaining oil in a very slow, thin stream, beating constantly until well blended. If at any time it appears that oil is not being incorporated, stop adding oil and beat mixture vigorously until smooth, then continue adding oil. Whisk in salt and pepper to taste. Chill until ready to use.
